The Paring was born in 2006 out of a desire to explore, experiment and excite—without rules. Made from the vineyard blocks that are either too young or don’t fit into the vintage style of the highly acclaimed JONATA and The Hilt wines—The Paring is a cut of each estate. The Paring puts pedigree first, and then lets imagination take over.
The grapes are sourced primarily from three Santa Barbara regions on the vanguard: Santa Ynez Valley, Sta. Rita Hills and Santa Maria Valley. The Paring wines are for pleasure and meant to be at home anywhere, pairing all foods and casual or elegant gatherings. They make every effort to strike a balance between volume, and texture, both direct results of the beautiful Santa Barbara sun and cool oceanic winds.
The soil of Caggiole is full of sandstone (tufo) – perfect for producing elegant non-tannic wines. Confino and Gracciano is rich in clay soil producing very powerful and tannic wines. The cellars are located on the Provincial Road of Montepulciano, where the winemaking, refining and bottling department is located, and in Via Umbria, in the frame of the 18th-century villa, which houses the family, the cellars and tasting room.
